ChefNobuhiko Masuda - A rare chef who honed his skills at a famous restaurant
Born in 1957 in Shiga Prefecture. Grew up in an environment rich in nature, surrounded by lakes and mountains, he was influenced by his mother, an accomplished cook, to pursue a career in cooking. After training at a traditional Japanese restaurant in Kyoto, he worked at one of Japan's most renowned restaurants, Shofukuro, for 20 years. Engraving the spirit of Zen cuisine and tea ceremonies into his mind and body, he opened Yamagencha in Minakuchi, Shiga Prefecture. In 2007, he moved to Gion. Even after changing the setting from a traditional Japanese restaurant to a counter seating, Masuda still greets his guests with his characteristic hospitality. His gentle personality, which relaxes the mind amid a quiet uplifting mood, is also appealing.

Gion is one of Kyoto's leading entertainment districts. Yamagencha is located in a quiet corner of the area. Passing through a charming noren curtain and down a stone-paved alleyway decorated with water, guests are greeted by a front door decorated with calligraphy by a famous monk. The restaurant has a tranquil atmosphere, with a cypress counter and seats at the end offering a view of the elegant small garden. The private rooms on the second floor are also tasteful, and the owner's spirit of hospitality is infused into everything, including tableware used by the British royal family and pottery carefully selected by the owner.

Masuda trained at a long-established tea ceremony restaurant in Shiga. Simmered dish dishes and seasonal hassun dishes that continue his tradition show different expressions as the seasons change. In winter, he presents spring with a large Shigaraki plate decorated with sekogani and butterbur buds. His aesthetic sense and playful presentation never ceases to fascinate gourmets. The mascarpone soy sauce and chili vinegar served with the sushi are also deeply flavorful dishes that fuse tradition with Masuda's unique worldview.
