四季折々の京都の食材をふんだんに使用した月替わりのコースメニュー。 春は京都里山の筍、山菜 初夏には鮎や鱧、トウモロコシや瓜類など、 旬の食材をふんだんに使用し、 味、見た目、食感、香り、温度にこだわった 月替わりのお料理をご提供いたします。 日本料理のベースの上にアレンジを加え、フォアグラやトリュフなどジャンルを飛び越えたボンバンス流、枠にとらわれない”心に残る料理”をご提供いたします。 A monthly course menu that uses plenty of seasonal ingredients from Kyoto. We use plenty of seasonal ingredients such as bamboo shoots from Kyoto Satoyama in spring, wild vegetables in early summer, sweetfish, conger eel, corn, and melons. Our philosophy is to elevate the essence of Japanese cuisine with meticulous arrangements, presenting a modern flavors that transcend conventional boundaries.
