祇園四条駅より徒歩5〜7分の場所にある天ぷら屋さん ぎをん 藤。
京都らしい和の雰囲気の中天ぷらを楽しめる、カウンター席メインの高級店。2023年天ぷら百名店に選出されています。
店主は長年京都のリッツカールトンで勤めた経歴を持っており、京都で働いてきた経験を活かして、2020年4月祇園四条にお店をオープンされたそうです。
今回いただいたのは、若紫コース。甘辛い蒲焼きダレで焼いたウナギと、酸味のある酢の物、毛蟹の茶碗蒸しでコーススタート。カラッと揚げた海老煎餅のような海老の頭。弾力があってフォルムも美しい天麩羅のエース車海老。塩につけることで、より一層甘味が増す山形県産のとうもろこし。熱々の胡麻豆腐を衣に閉じ込めた天ぷらと、ウニ、黄身醤油が合わさった絶品料理と、素晴らしい天ぷらが続きます。
敢えてそこまで油を吸わせずカラッと揚げた泉州の水茄子。口の中でホロホロと溶けていくような食感が嬉しい福島県産の太刀魚。京都に行くと食べたくなる、京都名産の万願寺とうがらし。比較的あっさりとした食材が多い中、お肉好きも満足できる牛肉の旨味が濃縮した平井牛の紫蘇巻き。雑魚天のカリカリ食感が印象的なサラダなど、天ぷら屋さんの定番料理も、食材の素晴らしさが際立っています。
程よい苦味と独特の風味を楽しめるスナップエンドウ。梅肉ソースと相性抜群のふんわりとした鱧。かなり立派な大きさで、なかなかに珍しい茗荷。締めの前には車海老の紫蘇巻きが出てきて、車海老に始まり車海老で終わるスタイルでした！
甘味のある天つゆの味が嬉しい海老かき揚げの天丼に、水菓子の赤紫蘇ジュース、メロン、さくらんぼまで、大満足のコースメニューだったので、ぜひ訪問してみてください。
