京都で鳥といえば、まず挙がるのが「水炊き」。スープの特徴として白濁した物が多く、薄味と思いきや、とろみとコクがあり、味もしっかりと濃い。そしてこちらの鍋は、一段とスープが白い。数日間コトコトと鶏を煮込み、冷やし、火を入れて…の作業を繰り返すことでスープは更に白く、味が濃くなっていく。歯触りの良い軟骨入りつくねが、また美味。もちろん翌日はお肌プリプリだ。水炊き3000円〜(3名以上)、2日前に要予約
