水炊き とろとろ白濁スープとコリコリつくねの好相性。
京都で鳥といえば、まず挙がるのが「水炊き」。スープの特徴として白濁した物が多く、薄味と思いきや、とろみとコクがあり、味もしっかりと濃い。そしてこちらの鍋は、一段とスープが白い。数日間コトコトと鶏を煮込み、冷やし、火を入れて…の作業を繰り返すことでスープは更に白く、味が濃くなっていく。歯触りの良い軟骨入りつくねが、また美味。もちろん翌日はお肌プリプリだ。水炊き3000円〜（3名以上）、2日前に要予約 |
年末に訪問。
31日から2日が休みだそうです。
なので、年内最終客でした！
相変わらずの繁盛店で予約者のみ満席。
そして、久々に白キモがあったので、迷わず選択。
レバーは苦手ですが、これは別格ですね。
そして、最後はとり釜飯でシメ。
