Environmental and social initiatives
フードロスの削減
フードロスについては長い年月かけて取り組んでいました。なんと言っても、スープを作る際の昆布や椎茸の出し殻が大量に廃棄されるのが勿体無い。最近になって、その出し殻をミキサーで粉々に粉砕して、スープに混ぜ込むことによって、スープに深みとコクを出しつつ、濃厚な豚骨風のスープにすることができることを再発見しました。
ヴィーガンメニューの提供
ラーメンスープに１００％オーガニック豆乳を使用し、グルテンフリー醤油とミリンをハラル向けに完全に煮切って、アルコール分を０.１以下にしています。動物性食材不使用で門外不出の極秘レシピでこってりでもない、あっさりでもない、こっさりな豚骨風スープを再現しました。
地域への貢献活動
地域と言わず、動物愛護の方々やアニマルライツ、宗教上の理由で動物性食材を摂取しない方々、アレルギーや好き嫌いで食べられない人々に外食する機会を提供し、殺されるはずの動物達が殺されないことに貢献していると思います。
環境保護への取り組み
当然ですが、肉食よりも菜食の方がCO2の排出量が、遥かに少ないことは言うまでも無いことで、無駄な殺生をしないラーメンを普及するために、海外進出も今年果たしました。
