Marugame Seimen's "Attention to Detail"

"Hmm, there are luxurious rice dishes other than udon." That's what I thought when I found the New Year's limited crab udon and crab rice here. Udon is thick and long, so in some areas it has been eaten as a lucky charm to pray for longevity at the end of the year and the beginning of the new year. Nowadays, not only in Kagawa Prefecture, known as udon prefecture, but also at the beginning of the year, there are more and more restaurants that serve New Year's udon, which is white noodles with ingredients. And at Marugame Seimen, which I visited on January 3, 2024, they were serving a slightly luxurious New Year's udon and rice dish at the beginning of the year. These are the [Crab and egg ankake udon] and [Crab and rice] that I ordered this time. [Crab and egg ankake] is an egg ankake udon with real snow crab as the red ingredient of the red and white. It is said that the real snow crab, which is characterized by its natural umami and sweetness, is lightly cooked without adding anything and the moisture is removed, allowing you to feel the rich umami of the real snow crab. It went well with the white dashi sauce and the soft, boiled noodles. The crab rice dish, on the other hand, is a slightly sweet mixed vegetable chirashi topped with colorful shredded egg and plenty of moist, fluffy shredded snow crab. Marugame Seimen also usually offers rice dishes such as Oyako-don (Chicken and egg bowl) and Onigiri as side dishes, but these are either plain rice or cooked rice, and I think that chirashi Sushi with vinegared rice like this one is rare. Not only did it have crab on top, but it also felt special from the outside. This crab udon is only available until January 15th. If you like crab or are interested in New Year's udon, please give it a try.
