ChefYukinori Yoshioka: Building a famous restaurant in his hometown of Kyotango
Born in Kyoto Prefecture in 1974, he grew up in a family that ran a catering business, and naturally aspired to become a chef. After graduating from high school, he worked in the kitchen at a hotel in Osaka, learning the basics of being a chef. He then spent six years training at the famous Kyoto restaurant Wakuden. In 2006, he opened Nawaya, a fish and vegetable restaurant, in his hometown of Kyotango City. His specialty is using simple combinations that make the most of the season and freshness to elevate seasonal ingredients to even more nutritious flavors. Now, as a famous Kyoto restaurant, there is no end to the customers who come from far away.

The seafood is mainly local, and they connect with producers all over the country to select the best quality. The vegetables they grow in their own garden and the wild plants they pick in the surrounding area further enhance the flavor. Of course, the reason they are known as a famous restaurant is not just because of the quality of their ingredients. Of particular note is their commitment to cooking the fish, leaving the skin crisp and cooking it so that the inside is rarer, bringing out a variety of textures and flavors. Their skill in making the most of the ingredients is one of the reasons they have captivated so many gourmets.
We have reopened as a newly renovated Japanese Cuisine restaurant serving firewood cuisine. Enjoy seasonal flavors that you can't get in the city, right here in Tango.
We reopened in July 2020 as a Japanese Cuisine serving firewood cuisine. As before, we will use wild seafood and vegetables from our own garden and local organic farmers, and now we will cook over the
... natural flames of firewood. Firewood cuisine can be prepared at a wide range of temperatures from 200 to 500 degrees, allowing us to prepare a wide variety of dishes. Why not enjoy your meal while watching the fire at the counter seats in our newly renovated open kitchen? We look forward to seeing you.
