松阪にあるかつ屋さん。
伊勢中川駅近く。
住宅街のマンションの下にある。
低温でじっくり揚げられた白いカツで有名。
このカツを目当てに訪問した。
店内はカウンター6席テーブル4卓。
白を基調にした明るい店内。
基本ルールとしては
・ご飯の量を選択できる。
・ご飯とキャベツは1回おかわり可能。
とのことのようだ。
メニューを見る。
ランチは3種類。
カツとエビ、ささみの組み合わせで種類が変わるようだ。
レギュラーメニューには松阪牛のカツやシャトーブリアンを使ったカツがある。
ヒレとロースで豚を変えるこだわりがあるようだ。
今回はカツをいろいろ食べたかったので、
ヒレとロースの盛り合わせとシャトーブリアンを頂くことにした。
オーダーすると15分ほどでキャベツ、副菜、ピクルスがやってくる。
副菜はきんぴらゴボウ。
キャベツには専用のドレッシングが一緒についてきた。
最終的にオーダーしてから30分ほど経ってカツがやってきた。
〇ヒレとロースの盛り合わせ定食（2200円）
・ロース
サクッとした衣。
しっとり柔らかい食感。
じわっと脂が広がり甘みを感じる。
・ヒレ
ロースよりさらに柔らかい。
旨味が広がるが少し肉の味は薄いか？
いずれも美味しいのだが低温調理の良さがカツの味にどう出ているかは
ちょっと判断出来なかった。
〇シャトーブリアンカツ2個（2400円）
鮮やかなピンク色で見た目には美しさを感じる。
中心はややレアで肉らしさを感じる。
噛むと肉汁が飛び出してきて、噛むほどに旨味がにじみ出てくる。
例えるならローストポークをカツにした感じだろうか？
そんな風に感じられる食べ物。
確かにこれは低温で揚げたからこその肉感だろう。
ただ食べていて思ったのは衣との一体感は課題かもしれない。
衣が剥がれてしまうこともあり、そうなるとカツらしさが無くなってくる。
一度食べてみたかった白いカツを食べられたのは良い経験だった。
