・＜特産松阪牛＞　黒毛和種の未経産の雌牛で、雲出川から宮川流域の旧２２市町村の生産区域での肥育期間が最長で最終の牛が松阪牛と定義。２０１２年度の松阪牛の出荷頭数は５８４９頭。うち特産松阪牛は３・８％。松坂牛でも、兵庫県産の子牛を生産区域で９００日以上育てた牛は、格付けに関係なく「特産松阪牛」となる。細かい脂肪交雑（サシ・霜降り）、不飽和脂肪酸を多く含み、脂肪が溶け出す温度が低い。
