At our restaurant, we only use domestically produced Kuroge Wagyu heifers. When purchasing at auction, we are so particular about purchasing cattle that we have carefully selected, that we will purchase them even at a high price. In addition, the ``cutting'', ``thickness'', and ``shape'' of meat are important points when it comes to enjoying it deliciously. In order to make the most of the characteristics of each part and enjoy the natural flavor of the meat, we use our own butcher shop's unique cutting method.
