ServiceGeneral Manager/JSA Certified Sommelier Kaito Fujiwara
Born in Hyogo Prefecture in 1992. After working as a hall manager and wine school instructor at a long-established Italian Cuisine in Ashiya City, he joined the popular one-Michelin-starred Japanese-style meal restaurant "Ono" in Kitashinchi, Osaka, where he worked as a sommelier. In the fall of 2022, he moved to Ise and became the manager of our store. Currently, he is in charge of 2 restaurant as the general manager of the wine Cafeterias "Osteria Il Most" on the 2nd floor of the "Ise Bishi Koku Brewery" facility. With a soft tone and polite customer service, we will create a good time for our customers.

KAMABOKO, which goes well with the wine that JSA certified sommelier Kaito Fujiwara and the long-established Ise kamaboko shop "Wakamatsuya" have created after many trial runs. Using the craftsmanship of our craftsmen, we add our own wine and local ingredients (Ise red sea bream, Tamaki pork, seaweed, Ise hijiki, etc.) to Wakamatsuya's original blend, and each item is carefully crafted to create an elegant taste. This is a masterpiece. Please come and enjoy the wine made by Ise's first winery and the experience of "Ise kamaboko" that can only be enjoyed in Ise!

We serve original wine by the glass made at the attached urban winery, ``Isemikuni Brewery.'' From the counter seats, you can enjoy ``wine that can only be enjoyed here'' while looking out at the winery beyond the small window. Please enjoy!

In the garden, we use handmade wine glasses made by Kimura Glass, with the idea that ``we want you to enjoy wine even more deliciously.'' The delicacy, beauty of form, and atmosphere that cannot be found in machine-made wines further enhances the gorgeousness and elegance of wine. After dinner, please spend some extraordinary time in the garden at the end of the day.
Enjoy ``in-house brewed wine straight from the warehouse'' while looking out at the winery in ``a space surrounded by Ise artisans''!
BAR Saitei (YUNIWA) where you can enjoy a drink while looking out at the "wine brewery" from the small window next to the counter. We also have wine and champagne carefully selected by our sommelier,
...beer made in Ise, whiskey, gin, etc. Please spend some time after dinner surrounded by the Ise cedar counter, the glass shelves decorated with Ise washi paper, and the works of local artisans.
