鮑って、こんなに美味しいものだったんですね・・・
ホテル宿泊時に伺いました。
一番手軽なコースを予約時に注文。
手軽といっても¥18,900なので、高価なディナーです。
伊勢志摩サミットで、各国首脳が食したという伊勢海老のスープ。濃厚な海老のスープですが、嫌味が全くなく、旨味しかない極上のスープです。缶詰でも売ってますが、¥1700ほど。かなり高級なスープですが、今まで食べた海老スープで間違いなくナンバーワンでした。
全般的に文句なしの内容なんですが、中でも驚いたのが鮑の美味しさ。これまで、フレンチや高級江戸前鮨などでも色々食べましたが、鮑の本当の美味しさを初めて教えられたというか、鮑が高級な食材である理由がよく分かりました。素材が良いのはもちろんのこと、その素材が最大限活かされて初めてこの美味しさになるんでしょう。
鮑と肉を２人でそれぞれシェアしましたが、鮑が本当に絶品でした。お肉ももちろん美味しいんですが、またこの鮑を食べるために来たくなる素晴らしいフレンチでした。

２度目の訪問です。
前回、鮑と伊勢海老が衝撃的に美味しかったのですが、今回は鮑はディップソースのみ。
メインは伊勢海老のフリカッセで、クミンなどのカレースパイスを使ったお料理で、リゾット風のお米もありました。チョウザメやジビエなど個人的にあまり好みではない食材もありましたが、どの素材も最適に調理されているので、何を食べても素晴らしいです。嫌いな食材であっても、あえてそのまま食べることで、料理の素晴らしさを実感できる。そんなフレンチだと思います。
