It was my first visit in a year as I was unable to come last year due to the coronavirus pandemic. During that time, it seems that the master was replaced. At first, I was a bit confused by the new boss's shyness, but gradually we started to have a lively conversation and had a great time. Even if the generations change, the taste remains the same, and the technique of aging the ingredients to bring out the flavor is still alive and well. I don't really like the red vinegar shari that is so popular these days, but I feel like the red vinegar shari in this nigiri brings out the ripeness of the toppings even more. It's also good that the rice is small. The 11,000 yen course is left to the master's discretion, with about 10 a la carte dishes and about 10 pieces of nigiri. When I was the former master, I was served Japanese sake, but it's a shame that that is no longer available.
