祝日の15時過ぎに初訪問。先客無しの貸し切り状態。特製醤油らぁ麺1100円を注文。
３分ほどで着丼。スープは淡麗系の深みのある醤油スープ。メニューによると鴨と大山鶏を使用したスープだそうです。麺は中太ストレート麺。「菅野製麺所特製麺を使用」と書いてあります。程よくコシがあってパッツン系の歯切れ良い小麦麺といった感じでしょうか。
チャーシューは豚肩ロースと鳥胸肉を低温調理しているそう。
煮卵も半熟具合と味の染み加減が絶妙でした。
いろいろと素材にこだわりがあるだけあって、完成された一杯。美味しゅうございました。
