I went to "Tofuro" on Fujimura's Hatsukoi Street, which I always pass by. The entrance was open today, so it was easy to get in, and a female employee greeted me immediately and guided me around. Before I could fully enjoy it, my order arrived quickly. The buckwheat flour from Hokkaido is ground in a special stone mill, and they are ground at low speed to preserve the flavor.The soba noodles are cold and come in two tiers. Having a heaping amount on one tier and having a little bit on two tiers gives it a nice feel, but it doesn't stick together, so it's definitely different. The sauce is a little sweet and only wasabi, no green onions or other condiments. There was no soba-yu either. It is rare for him to be so clear-cut. Is this also to enjoy the flavor of soba? The soba noodles were well seasoned and had a good flavor. The mini Seafood Bowl had two slices of white fish and salmon in the middle, and two pieces of egg were hidden under the perilla leaves on which the middle pieces were placed. The rice was also made with Hitomebore, which uses half the amount of pesticides and chemical fertilizers, and it went well with the fish and was delicious. The soy sauce that was on display was Yamasa's Silk Soy Sauce with 40% less salt.
