THE MALL 仙台長町 に行った際にすぐ隣のこちらに寄ってみました。
注文したのは、6/8から提供が開始された
夏季限定・北海道産塩水ウニの冷製スパゲティ 1,958円(税込)
Mia Angela の母体は北海道なので、
「北海道産ムラサキウニは殻から取り出し
獲れたばかりのウニの鮮度と味を守るため、
北海道から各店へ直送しています。
ウニの身はとてもデリケートで崩れやすいため、
形を維持するためにミョウバンを使用されることが多くありますが、
ミョウバンは使用せず、黄金色に輝くウニ本来の甘みと
とろけるような食感はもちろん、口に入れた瞬間に広がる磯の香り、
繊細で上品な味わいにはこの上ない感動があります。」
というのが美味しさの秘訣のようです。
ちなみに北海道のウニの旬は時期によって場所が移り変わるそうで、
本日のウニは「根室産」とのこと。
10分ほどでパスタが登場。
フォーク＆スプーンが生ビールのジョッキのように
キンキンに冷凍されている！
パスタの皿も冷たく冷やされていたし、
冷製パスタにかなりのこだわりを感じます。
ウニを崩しながらパスタに混ぜ込んで。。。
とろけるような滑らかなウニの甘みが拡がる！
ベースのパスタは帆立＆昆布ベースのソースの
冷製にぴったりなあっさりした旨みで、
ウニの味わいを引き立てている。
それにしてもウニが美味しい（＾＾）
クーポンを提示して1杯無料になったスパークリングワインは
パスタが来る前に飲み干してしまったので、
ランチセット？のスパークリングワインがあるとの事で 352円で追加。
ウニパスタの美味しさを引き立てる味わいでした。
