メガでいこうぜベイベー!
って一杯目はメガハイボールでした。
そして、何気に初めてお邪魔させていただきましたね。
付き出しは、イカの天ぷらと山芋の天ぷら。そして生ハムサラダ。
イカがプリッとして美味しいです。長芋もサクッとしてホクホクの手前のシャキシャキ感を少し残した食感。この揚げ方を狙ってる時点で凄腕の方ですね。変に強めの味付けをしてないのも好印象です。
タラの芽天ぷら。つゆと塩。この二刀流がとても良いです。つゆは薬味を入れてキリッとした印象でしたね。塩はアルプスの塩。
タコ酢。練った辛子は恐らく白味噌などと混ぜたものかなと。タコは、生のタコです。鮮度がよくて本物の地どれですね。半夏生のタコには敵いませんが美味しいです。
串焼き5本盛。
つくねが良いです。ナンコツ入りですね。
こちらの味付けの特徴は甘みを抑えたキリッとした感じですね。これは一貫した味です。九州的な甘みの強さはあまりなかったように思います。
女将さんとお話させていただきましたが、こちらのお店は大将がやはりかなりの料理人ですね。四十年以上続くお店で、石川から東京、大阪と色んな場所で修行されてますね。
紆余曲折色んな経験をされたようですが、お店に立つときはいつも真剣勝負とおっしゃっておられたのが印象的でした。
接客も素晴らしかったですね。
