This authentic handmade soba restaurant is located in front of the large parking lot of the Hokusai Museum, in the center of Obuse. The taste of the soba, created by a special milling method, is enhan
...ced by the secret soba soup, which is not available to anyone outside the restaurant. The soba flour used is a carefully selected blend of soba from major soba producing areas, including all over Shinshu. The soy sauce is specially ordered using domestic soybeans, the soup stock is a blend of authentic dried fish, and the kelp used is Rishiri kelp from Hokkaido. The owner has been a chef for 42 years and a soba maker for 28 years, and has spent his life perfecting this soba, so there is no compromise whatsoever!
