素敵な空間
カウンターのみ8席。目の前には薪の焼き台。その焼き台が工夫を凝らされ素晴らしい。
りんごの木の薪をまず左下に入れ強火、上の段は遠火、右は弱火、燻香などなど…昔の暖炉のように鎖のカーテン。
その焼き台から繰り広げられる香り高きお料理。
こんなに美味しいスッポンは初めて。
ミニ太刀魚丼は「太刀魚重」として販売して欲しいくらい。
食材に真摯に向き合う熱心なシェフはきっと多くの人の心と胃袋を掴むことでしょう。

二回目の訪問でした。
軽井沢でゆっくり和食を楽しめるお店。
薪の香りを上手く取り入れた一皿一皿を楽しくいただきました。
すっぽんもピクピク生きているものを使用。
新鮮さもさることながら薪で焼くとこんなに美味しいのだと感動。
鰻も関西風で歯応えがあり美味しかった！
