“Genbuta” is a rare breed of pig produced at Hayashi Farm (Iida City). Previously, they accounted for approximately 95% of Japan's pigs, but due to their slow growth and the time required to raise them, they are no longer bred worldwide. However, because it tastes so good, it has been modified to fit current distribution plans. Normal pigs are shipped after about 180 days, but the ``Phantom Pig'' is carefully raised and shipped at least 200 days after birth. Enjoy the soft meat and sweet fat!

In order for you to get to know Shinshu, feel Shinshu, and enjoy Shinshu, we offer dishes that are particular about Shinshu ingredients.
