春は山菜。夏は鮎。秋はきのこ。冬は熊。
以前はジビエに対して好んで食べることはありませんでした。しかし、ここのツキノワグマ、シカ、イノシシどれを食べても臭みなど意識することなく毎回感動のある料理をいただけます。
特に、クマは美味です！
また、野菜の火入れが私好みで野菜の旨みが味わえます。
初めて訪れてから4年経ちますが、季節ごとに定期訪問しても毎回、料理に新たな挑戦があり驚きと新しい味との出会いが楽しいです。また、個人的には器も工夫されていているのでとても気に入っています。
地産地消ではないですが、冬の蟹はかなりおすすめです。
