この地区の高級店の一つです。
店の名前どうり、包丁さばきに自信有りという感じで、お造りのできばえは一流です。飾り切りということではなく、いわゆる断面とか切り身自体の美しさです。
腕が目立ちすぎて、割烹と銘打っている割には他のメニュー（焼き物・煮物）が若干色あせて見えます。そうは言っても、お魚好きには満足してもらえるお店だと思います。
ずいぶん前にお昼も開けてた頃は、４名で押し掛けて、お造りの３点盛り・揚げ物・煮物・焼き物を名々に、大皿のてっさと桶の五目チラシ鮨という構成で、￥２０００／１人という、考えられないような食事も出来たのですが、さすがに今はもう無理なようです。
