I was on a business trip to Tsubame City, Niigata Prefecture, and happened to pass by Ramen shop in my car, so I went in. What impressed me was the metal Ramen bowl! Tsubame City is famous for metal processing, so it makes sense. Ramen here is soy sauce-based with plenty of onion and maybe yuzu? It also contains citrus peel, giving it an amazing flavor. It was very delicious, but personally I felt it would be better if the soup was a little warmer.
