新潟のミシュラン星付きで、日本料理と鮨を全部回る事を目標にしてその1件目の魚幸さんです。『うおこう』だと思っていたら『うおゆき』でした。(笑)
高速で燕三条インターを下りて進みます。びっくりするぐらい住宅街にありました。店構えがこの近辺とは別世界で期待し店内に。コースの『昼懐石』@¥3500を注文し、茶碗蒸しから最後のぜんざいまで約1時間ちょっと。どの料理もおいしく、明日の仕事の活力になりました。久々だなー。
次は何処に行こうか。
<茶碗蒸し>
蓋を空けると、出汁のいいかおり。しかし味はくどくなく、口の中にほのかにすっと消えていく優しい出汁の味。
<炊き合わせ>
里芋、麩の味が印象に残る。今でも思い出せるくらいおいしかった。
<造り>
アラと鯛焼霜。アラが魚の旨味があり、弾力もありこちらが好みでした。
<間瀬の毛ガニ>
かに酢のジュレがかかっておりこちらがカニの甘さをひきだしていました。カニの身も甘かった!
<焼き物>
サワラの西京焼きと弥彦の椎茸。
これが一番驚きました。香り、味の濃さ今まのでの中のベスト椎茸。確か『弥彦の太郎』という名前の椎茸。
<ぜんざい>
蓋を空けると餅の香ばしい香りと小豆のかおり。ほんのり甘く、幸せな気分になりました
