長岡の蕎麦店【そば小屋】は、強いこだわりを持つ店主のお店。
こちらの天ぷらせいろ大盛りを。
まずはつゆにつけず、そばのみで風味を味わいます。
次につゆにつけて。
しょっぱめに作ってあるとのことで、先の方だけちょっとつけて。
ちょうどいい塩梅で、鰹節の風味も感じられるつゆです。
ただ、細めの蕎麦なせいか、二八の割には切れていて短いのが多い。
もう少し長めのほうがすすりがいがあるし、
先だけつけやすいので好みです。
薬味は三種。
つゆに入れず、そばに散らしてとの店主のレクチャーが。
そのほうが確かに、つゆの味が変わらず味わえますね。
天ぷらを。
エビは車エビ。身がプリッとしていておいしい。
食べ始める前に店主が食べ方をレクチャーしてくれたり、
こだわりはそうとうなもの。
ふのりそばではない蕎麦を食べたいという人には一度ぜひ。
