踏切に向かう横道に入り、途中ちょいと首を曲げるとなにやら工場敷地内風の場所に灯がともっている。興味津々、2件並んだ手前のますますさんへ入店。客はいない。いなだ刺しを注文すると店主から「今日はまぐろをどうぞ。自信ありです」ということなのでお言葉に甘えて。むむ。まぐろ美味いうまい。本当にこの価格でいいのだろうか。しょうゆ皿まで冷やしてある懲りよう。ゆで舌もやわらかく、スープがぶっちぎりに美味い。店主いわく、新潟の店は守りの店が多く、他県の美味い酒を研究せずに相変わらず新潟の酒しか置いていない店や、肴も創作せずに田舎料理的なものしか出さない店が多いそうだ。店主は、東京の大山周辺の著名な居酒屋で修行を重ねてきたとのこと。進歩していく強い意志や誇りが、表情に現れている。私が心配なのは、店を出るまで他に客が一人も来なかったこと。理念とは別に、商業のコツをつかんでほしい。東京とは飲んべえ人口が違うのだ。次に長岡に訪れた時にまたお会いできるようがんばってほしい。
