This restaurant was opened by a former Western Western Cuisine chef who decided to open it. After gaining 18 years of experience at a Western Western Cuisine restaurant, he spent four years training at a sushi restaurant, visiting many long-established sushi restaurants in search of his ideal sushi, studying the techniques of each restaurant and learning them on his own to establish his own unique style. He was finally able to open a restaurant offering a pioneering selection sushi course in Nagaoka. Currently, while continuing to offer his "ideal sushi," he continues to research and evolve every day, providing the best possible sushi.
