What is “Donkori-ism”?
In 2010, he opened "Italian Restaurant Doncolino", the predecessor of Doncoliism, on Miyakojima. The restaurant's name comes from the nickname given to it by an Italian colleague when he was training
...in Italy. Doncolino is a restaurant with a seating capacity of about 30, but the restaurant and cuisine have been pared down and refined. I want it to be Restaurants! With this in mind, it was reborn as ``Doncorinoism'', which means that it condenses the spirit of Doncorino.
