新地の鮨屋なんて、超久々です。
懐石料理の様な八寸から出てくる。秋の彩り鮮やかで美味しいものばかり。あん肝はヌタ和え。鱈の白子、イクラの醤油漬けは、しょっぱく無い様に出汁で伸ばしてるのかな?なかなか繊細な仕事です。
炙り穴子、鰹、蟹身の雲丹のせキャビア添え!なんて贅沢なんだ!こんなの美味しくない訳がない!
土瓶蒸しもたっぷりの出汁と松茸、鱧の量も多く、かなり豪快な感じです。
とても美しく磨かれた包丁。チタン製で切れ味も抜群だとか。刃渡りを一杯使う包丁さばきで切られた魚は、味も抜群で違いますねぇ。
戦勝正宗と洗心とか未経験のお酒を頂き、美味しい握りも堪能。イヤー!とてもいいお店です。
いつか、こういうお店を行きつけにしたいものです。
