大阪市の北新地に店舗を構える松阪牛割烹店「牛寶」さんに行ってきました。
アクセスは、淀屋橋駅から徒歩5分ぐらいの所です。
著名人がお忍びでお越しになる名店で、ミシュラン一つ星の高級店でもあります。
一見お断りで完全紹介制で紹介者と来ないとお店に入れません。
店内はコの字のカウンターがあり、調理しているのが見えて臨場感があります。
お肉は最上級なものを扱っているのですが、一番驚いたのはトリミングの量です。食べる量よりもトリミングの方が多いと思います。恐らく半分以上はトリミングです。
大将いわく本当に美味しい部分はこれぐらいだそうです。肉自体の旨味が強く、余韻もあり、とても好きな味わいでした。
肉だけではなく、レバーもかなりトリミングします。なので今まで食べたレバーの中で一番美味しかったです。 レバーも大将いわく本当に美味しい部分はこれぐらいだそうです。
炉窯で松阪牛塊を匠の技で焼き上げる逸品は、しっとりとした柔らかな独自の食感と肉の旨味が引き立っていてとても美味しかったです。
美味しい食事で身体を癒すことが出来ました。
また是非再訪致します。
