Born in Shizuoka Prefecture in 1981. His family runs a traditional Cuisine Ryokan and Auberge, and he grew up watching his grandfather and father, both chefs, so he naturally aspired to become a chef. After graduating from a culinary school in Osaka, he honed his skills at a long-established Japanese restaurant in Kobe for 11 years, and in 2013 he opened "Koreshin," fulfilling his long-cherished dream of going independent. The restaurant has mainly counter seating so that he can check the guests' reactions while cooking. It was awarded one star in the "Michelin Guide Kyoto/Osaka 2018."

The dishes that Chef Sekine creates change almost every month. He is keenly aware of the comings and goings of the seasons, checks the condition of the ingredients, and serves only one dish, as if sealing the season in its entirety. In Chef Sekine's hands, ingredients from the mountains, the sea, and even those grown in different places are transformed into elegant dishes that are full of the natural flavors.
