シェフやスタッフの距離が近く、常に笑顔がある明るく活気あるキッチン、カウンター席がおすすめですね。
フレンチ串揚げ、その名の通り、長年フレンチで鍛え上げたベテランシェフによる創作系ですが串揚げというより「揚げるフレンチ」といった感じで フライヤーによる絶妙な火の通し方、揚げ物とは思えない軽快な口当たりとフレンチのソースでの奥深い味わいがあります。食材はオマール、雲丹、トリュフ、筍、アワビ、フォアグラ穴子、トラフグなど高級食材が目立ち、食材が見事な融合で創作されてます。驚きは和牛までフライヤーで調理、小型のグリルで焼き目をつけてあとはコロモをつけて揚げてます。もちろんコロモを外して盛り付けますが水分を逃し旨味を逃さずで凝縮感と柔らかい食感が得られるようです。なんか魚の塩釜焼に近い発想ですね、美味しいフレンチでした。
