天満、天六、中崎町のトライアングルの真ん中に位置するフナシェフさんですが、
初めての方は必ず迷います笑
完全に住宅街の中にあり、1Fの鶏st YARDBIRDさんを探してもらった方がまだわかりやすいかもしれません。その裏手に入口があり、金色の看板。
予約時間になって扉があき、2Fへと。
フナシェフこと船岡シェフのセンスは本当に日本トップなんじゃないかと思います。
中でも野菜のテリーヌはいつも絶品すぎて…
旬の野菜それぞれをそれぞれに適した時間でゆでてテリーヌにしているので野菜の甘みと旨みが段違いなんです。
もちろんアミューズから始まり、前菜、スープ、魚、肉料理、デザートと本当に外れなし。
そして見た目がとっても美しい。
本当に美しい。
でもやっぱり野菜の衝撃が私的には一番なんです。
大きなカウンターで盛り付けされるライブ感もなんとも楽しくて。
船岡シェフは料理を作るときは割と無口なんですが、いざ喋るととっても熱い方で、私利私欲が本当に見えず、子供であったり、外国（特にカンボジア）であったり、地域であったり、お弟子さんに還元しようとされる姿勢が尊敬一択。
毎回毎回こんなに楽しみな食体験はありませんね。
