北新地のTOMONOは3ヶ月に1回くらいの訪問ペース。ライブ感のあるカウンターのみ8席の中華料理。エスサワダの料理長だった友納さんがワンランク上げた料理を繰り広げている。
まず、上海蟹の紹興酒漬けから。上海蟹は食べるのが面倒だが、凄く食べ易いかたちで美味しいところを楽しむ。
北京ダックは林檎と合わせての提供なのだが、あいにくアレルギーのため食べれず。林檎も珍しい品種のもの。(スリムレッドかな)
いくらと赤雲丹の寿司。中国の酢を使っているとはいえ完全に和食。
ふかひれはヨシキリザメだが繊維が極太でかなり上物。シャンタンで煮込んで白菜のスープと一緒に
かますを炙って、黄韮、みずの実と合わせ、ナンプラーと酢で。これも味は和食に近い
三重の鰆の藁焼きを海老芋のペイストと山椒ソースと
黒毛和牛のハラミに湯葉、チーズ、栗を掛ける。山葵と銀杏を添えて
〆の一品目は松茸と三つ葉の麺。松茸好きなので美味しい。
もう一品は先程のハラミを使った麻婆豆腐。もちろん美味しいに決まっている。
デザートはチーズケーキとごま団子
