●Chef Katayama/Born in Okayama. After working as a professional musician, he entered the world of cooking at the age of 24. After honing his skills at a downtown Italian Cuisine, he studied under Kota Ono of the one-Michelin-starred restaurant "Ono" in Kitashinchi. With his inquisitive spirit and sense, he brings out the best in ingredients and expresses his dishes even more brilliantly. ●Sommelier Otsuka/Born in Ehime. Starting at Hotel Okura, he worked at Wine Bar, Italian Cuisine restaurants, "Ono", etc. before becoming manager. He is a JSA certified sommelier and Japanese whiskey certifier.
