The characteristics of authentic Neapolitan pizza are its texture and taste. At CANAL, all of the dough is handmade to bring out the flavor! By letting it sit at a low temperature for at least 24 hours, the sweetness and flavor of the wheat is brought out, and then the dough is placed in a 460 degree oven for 90 seconds. By baking them all at once, you get the exquisite texture and taste of ``Sakumochi''.
