Since it was my first time here, I had a business lunch. I haven't been to Chengdu for a long time, but I'm looking forward to Osaka's Szechuan Cuisine. A large room is filled with fairly simple tables. The plates, astragalus, and the people serving them are the same as at Machina Chuka. The format is to choose a standard dish and one meat or fish dish. I chose the fish of the day, fried squid with mustard. It said it was Szechuan Cuisine, but perhaps because the head chef is Taiwanese, or perhaps because they were considering the lunch crowd, the standard dish, mapo tofu, has a very modest amount of southern Chinese pepper sauce. It looked ordinary, but the taste was delicious with a rich soy sauce flavor. The fried squid with chili pepper was also very soft with a fine knife cut. The rice is a little soft and sticks when scooped with a spoon. If you're going to eat it with mapo tofu, I think it's better to make it more messy and soak up the sauce. Maybe it gets serious at night. The dandan noodles looked delicious.
