ワイン仲間とのお疲れ様会で利用しました。
スペチャーレコースで予約し、ドリンクは当日現地でペアリングをお願いしました。
到着すると、席は区切られた個室で用意されていました。私たちはあーでもないこーでもない言いながらワインを飲む面倒な客なので、他のお客様から見えないのは気を遣わなくて良かったです(≧∇≦)笑
お料理はどれも美味しく、特にソースに凝っているので、ペアリングが生きます(っ’ヮ’c)
普段イタリアのワインを好んでは飲まないので、あえてイタリアンでグラスワインが豊富なお店をチョイスしたんだけど、こちらのソムリエさんは知識も豊富で、とても詳しく説明してくださったので、すごく勉強になりました。
一番好きだったのは、デザートの時に出していただいた
Fontodi Vinsant del Chianti Classico 2005
マルヴァジア50%、サンジョヴェーゼ50%
伝統的手法で造られる甘口デザートワインで、
収穫後、5カ月間もの間藁の上で自然乾燥させた葡萄を丁寧に圧搾して澱引き。その後、栗の木とオーク材で造られた小樽に移し替えて最低6年間熟成。
プルーン、熟したレーズン、ブラックチェリー
アルコール度数が12.5%と低く、お酒が強くない私にとってはデザートワインとして好都合✨

✩.*˚今日の豆知識

1968年に設立されたFONTODI
サンジョヴェーゼだけでは良いワインはつくれないと言われていた時代に、サンジョヴェーゼ100%でも美味しいキアンティが造れるはずだと考え、実際にそれを生み出したのがマネッティ兄弟。
しかしそれは法違反でキアンティとは認められないので、しばらく製法は内密に。
そのうちにキアンティ100%のワインが広く出回るようになり、
ついには1996年に法律が改正され、サンジョヴェーゼ100％のワインもキアンティと認められるようになった。
