赤酢【寿司】土佐堀
本店は簡単に伺えそうにないので、赤酢土佐堀店に伺いました。
もともと和食の有名店のようで店内は赤酢のカウンターと和食のお店が融合している
実に珍しい形態。
だから。店外看板も2枚ｗ 魚と乾杯 うず潮さん
次回行ってみたいお店偶然発見!(^^)!
子供も入れる希少な寿司屋大発見ｗ
堅めの熟成酢で握る「赤酢の寿司」
刺激的な寿司は今関西で流行ってますよね
大将は和職歴長い料理のプロですが
その方に握ってもらうお寿司も
一品も最高でした。
ここは車エビが生けすからだしてすぐに調理するって下調べしていましたが
確かに新鮮で味わいあるおいしい車エビでした。
サイズがすごし小さく、気になりました！残念
穴子、川鰻、海鰻の一品料理はそれぞれの味付けと焼き方で
とってもおいしくいただかせて頂きました。
さすがです。
子供はジュース、子供用うどん無料です(^^)/

落ち着いたカウンターで頂くこの土佐堀店のコースは
とっても良かったです。
有明一番海苔最高
トロたく最高ｗ
赤酢グループはマグロがウリですが
マグロもとっても美味しいです！
とにかくまた再訪したいお店になりました。

マグロの超希少部位と石垣貝「今年最後の・・」が食べられて
ご一緒の他のお客様の質も良く、リアクションがまた美味しかったｗ
大間のカマトロ最強〜♪
ここの大将はもともと和食のご主人
そのご主人が寿司仙人からスカウトされた形ですね(^_-)-☆
腕がいい！
魚の調理包丁さばきが一番良い気がするし、魚愛が赤酢グループで一番と感じます。
場所があれなので、食べログ点数低いけど、赤酢グループならここが一番お勧めです。
大将の説明もおいしさアップ
酢飯の温度管理、堅すぎない飯の仕上がり
赤酢グループ酢飯の硬さにばらつき合ったり、味日によって違ったり
凄いあるあるなので、ここは安定感あります。
細部への拘りと手間暇かけた仕込み
熟成による味の引き出し
そもそもの仕入れの魚のサイズなど
この日は大間産の180キロのマグロでした。
購入時の紙見たかったなあ～せっかくだしその方が盛り上がる
海鰻パリッと皮が焼かれて、イタリアンにトリュフバター
激うま(^_-)-☆
アワビの肝ソースは何度も食べているので
普通にうまい
この日白身魚結構多かったが、どれも仕上がりが良く
激うま白身ちゃんばかり
甘エビやこはだの二段重ね握り
最高♪いろんな握り方あるが、これは写真映えはそうではないが
食べ応え的に最の高ｗ
のどぐろのご飯も安定のおいしさ
満足の夜でした( ^^) _U~~次回もこちらに伺うことにします！
