お店が目指すのは『思い出に残る鮨屋』
それだけに大将のトークとパフォーマンスで
楽しませてくれる印象に残る鮨店。
品のある和を感じる綺麗な店内は7メートルも
ある1枚板のカウンターと個室があります。
食材と向き合い魚の味を残し臭みを感じずに
お客さんの口に運ぶために緑茶で締めるなど
研究熱心で常に探究心を忘れない大将でした。
そんな大将が握るお鮨のネタは大きいのが特徴。
そして包丁の入れ方も綺麗✨
シャリは赤酢ですが酸味は少なく甘味などを
加えているため赤酢が苦手な人でも
食べやすいシャリになっています。
お米の粒が大きく握るシャリも大きかった
のが印象的でした♡
今回はランチで訪問させて頂きましたが
メニューはおまかせコース1本。
一品料理が4品にお鮨が13種類出てきました♪
お昼にネタのレベルを下げお値段もお安く
する店が多い中、こそは妥協したく無いと
夜と同じネタを使用しお鮨メインのランチ
となっているため品質は満足できるもの♡
夜よりお鮨の数は1貫多くアテ類を少なくされてます。
それでも すんごいボリュームでかなり満腹。
お鮨をメインでいただきたい人はランチの
方がお得感がありますよ！
落ち着いた雰囲気でラグジュアリー感も
あるので会食・接待・デートに使えそう。

桜チップでスモークしてから皮目だけ焼いてあり
海苔は熊本の八代すじ青海苔を使っているため
すんごく香りのいい海苔で鰹は表面サクッと。
身は柔らかい。

やまのさん名物のキャビアが乗ったイカ。
イタリアのオシェトラ キャビアをたっぷり
乗せてあり ネットリしてないスッキリした
イカの食感とすだちの香りが良かった♡

肉厚でとっても柔らかくすだち香るかすご♪

低温で揚げた桜エビの香りが立ちサクッと食感。
ぷるんと柔らかい品の良い茶碗蒸しでした。
