仕入れにこだわる
毎朝、中央卸売市場に仕入れに行き、鮮度の良い魚を買い付けるこだわり。 旬の魚をおいしく料理いたします。 当店名物は穴子のにぎり。肉厚があり、脂がのっています。 寿司1皿2貫300円～ 一品料理多数あります。facebook 鮨と肴蔵で検索！！入荷情報あります。 |
11時半すぎに訪問。カウンター8席と小部屋が1室。先客1組、後客5人ほど。ご主人一人のワンオペなので時間が掛かると伝え、常連さんには時間をずらすようにお願いしているようでした。
お寿司の数とネタの種類によってセットものは5種ほど。800円から2600円の価格帯です。壁には全部で20食ほどで仕舞うとありました。
お寿司7つと巻物の梅セット1000円をオーダー。
ワンオペゆえ15分超で到着。あらの赤出汁もついてきます。ネタはオーソドックスなものがほとんど。ネタの仕事もしてあります。ご飯は大きすぎず小さすぎず。
時間が掛かる場合はあっても清潔な店内で本格的なお寿司食べられるのはありがたいです。
