魚の研究者の先輩からオススメされたお店で、
店に入るまで知らなかったけど
こちらの店主さんは魚屋さんでYouTuberさん！
（24/1/18現在で登録者8.4万人！！すごっ）
まだ出来て1年も経ってない穴場の
めちゃくちゃ良いお店でした！
魚の知見を活かした締め方や食べ方を薦めてくれる
なっかなか見たことないアプローチのお店！
店内はテーブルの木目が綺麗で
さっぱりと大人な雰囲気の居酒屋さん！
ここにやたらとイケメンな店主さんがぁ！

この値段でワンランク、ツーランク上のお刺身！
メニュー表に書いてある聞きなれない、
「鬼締め」というものの話を聞きました。
めちゃくちゃ簡単に言うと
「魚の取れた場所の海水で処理することで
魚にストレスがかからないから美味い」って話で
発泡スチロールに水道水で作った氷敷き詰めても
そら美味しないでーってことのよう！
いや、これだけシンプルなお造りって形だと
そのアプローチが正しいのがよく分かります！
あと、韓国唐辛子のエキスを醤油に出して
その成分と一緒に食べると旨いという
長崎の五島列島の食べ方も採用されてました！
カワハギの姿造りは必食！
提供時にまだピクピク動いてるカワハギは
過去食べたどのカワハギより美味！
肝と一緒に食べると飛べます、飛びました。
盛り付けの美しさも素晴らしかった！
柚子の香りが印象的なぶり大根や、
上品さが際立つ出汁巻も美味かった！
素材際立つものも料理も美味かった！
日本酒も20種類くらいあったし、
めちゃくちゃオススメ！
天満のいつも飲んでる辺りからは外れるので
教えてもらえてめちゃ良かったお店です！
