His Tempura, which he trained at a star-rated Japanese restaurant, uses cottonseed oil to make it light and light. We are particular about frying at a low temperature to quickly harden the batter and retain the aroma of the ingredients, and in the second half of the course, we purposely use a high temperature to slightly char the ingredients to add flavor. In order to preserve the flavor, the flour is stored in special equipment at -60 degrees Celsius and then frozen to evaporate the moisture, creating air bubbles that cover the flavor of the ingredients.
