フランス パリミシュラン一つ星レストラン
「アリアンス」の３年ぶりのフェアをいただきに伺いました。
【Déjeuner】22,000円
・グジェール｜アリュメット
軽くチーズの香りが上品。
・スナック
ロリポップのようなのはシャンパーニュの泡を纏ってて
しゅわりとした香りと食感がおもしろい。
ライスペーパーでつつまれた春巻きのようなのは食べたことの
ないような風味と旨味で新しい。
丸い団子は紅生姜やタコが入ってて大阪オマージュの遊び心あふれる逸品。
・トマト
トマトとバジルが入ったムースのようなお料理。
どちらの風味も楽しめて上品です。
・カニ｜カブ｜青リンゴ
カブをラビオリ状にして中に蟹と青リンゴが入ってます。
カニの旨味が濃厚でリンゴで爽やかに演出されてこれもうまい。
スペシャリテはどちらか選べたので友達と違うのを注文してシェアしました。
✔ジャガイモ｜キノコ｜エシャロット
ジャガイモがスペシャリテは珍しいですね。
ほくほくとしてうま味が複雑ですばらしい。
✔ニョッキ｜キャビア（+8,000円）
もちもちした食感が楽しく旨味を吸っててこちらも〇
キャビアをたっぷりかけたら贅沢なお料理です。
・ホタテ｜ゼラニウム｜ラディッシュ
大きなホタテにはお菓子によく使うゼラニウムが使用されてます。
甘いんですけどソースの酸味と相まってこちらもおいしい。
・ナス｜黒トリュフ
ナスにトリュフとはおもしろい。
香りがすごくて悶絶！
・仔羊｜キュウリ｜ミント
仔羊は柔らかくてジューシーでキュウリの風味がいい塩梅。
ミントのソースが爽やかに香ります。
・ノワゼット
食感がいろいろ楽しめていいですね。
これもさくとろでヘーゼルナッツの風味がすごい。
・ヴァシュラン｜フルーツ
これも食感がおもしろい。
さっくりくしつつとろりとしててヘーゼルナッツの風味が芳醇。
・ミニャルディーズ
小さなお菓子は最後に嬉しいですね、
コーヒーと合わせていただきましたが上品でした。
最後まで余すところなくおいしかったです。
