Yakiniku (Grilled meat) Jiro procures Omi beef, both the meat and offal, directly from the farm. The sweetness of the fat and the low melting point create a delicious flavor that makes both the meat and hormones taste like Omi beef. Omi beef is raised using refined water produced by rich nature and by honest cattle herders. Our store purchases hormones from six designated Omi beef farms, where we can see the producers' faces.

From Omi beef ranch, Kuchiki Takara Ranch. Milky Queen grows in soil rich in Omi beef compost. After harvesting, the rice goes to the Omi Beef barn. This rice is packed with the flavor of Omi, produced through recycling farming in a rich natural environment. Cook slowly in a clay pot. *It will take about 30 minutes after you place your order. The massage and dipping sauces we use at our store are constantly changing through trial and error. The current dipping sauce is inherited from the famous Yakiniku (Grilled meat) restaurant "Kibayashi" in Omihachiman, which was passed down from generation to generation, and has been adapted to Jiro's style. [Yakiniku (Grilled meat) Jirin-san was sadly closed in the fall of 2014. ]
