At our store, we have built a storage room at -5 degrees Celsius to manage our sake. In a normal refrigerator, fresh sake has yeast that is alive and fermentation progresses in the bottle, but at -5 degrees, yeast activity stops and sake can be stored in a state of suspended animation, allowing you to enjoy it in the fresh state it was just shipped from. We can provide it. In addition, sake for long-term aging is aged slowly and slowly in the store, so you can enjoy sake that will change after one, three, or five years.
