ミナミ繁華街のビル、一番奥まで進むと見えてくる「鮨 極」さん。
鮨コース。
前菜は、白子の茶碗蒸し、いくら、海老芋。
鰤の漬け。
握りが開始される。
障泥烏賊、表面に細やかな庖丁が入り、甘味を表現される。
甘味がじんわりと滲む赤酢のシャリ。粒は柔らかく小振りな握り。
鰆、柔らかく脂が溶ける。
小鰭、皮目はしっかりと食感を残されコクのある脂が流れる。
石垣鯛、薬味の香りに包まれ穏やかな甘味が広がる。
ヤイトガツオ、爽やかな酸味。
