鮨 極さんに伺うことができました。
心斎橋に位置しているお店であり御堂筋線心斎橋駅からも徒歩ですぐのため非常にいいロケーションと思います。
お店はミナミの繁華街の中にあるビルの1階奥にあり隠れ家感があります。扉を開けると目の前にはカウンター席が広がっています。今回はカウンター席でお鮨をいただきました。
大将がお鮨を握り和食を料理長が担当されます。鮨コースと鮨懐石コースがありますが今回はお勧めの鮨コースをいただきました。
まず最初の一品は白子茶碗蒸し、ナマコ、海老芋ケシの実まぶしでした。白子の茶碗蒸しは大変美味しくいただきました。
ここからお鮨が続きます。天然鰤ネギペースト和え、石鯛の昆布〆、あおりイカ、サワラ、コハダです。石鯛はこれまでにあまり食べたことがなかったのですが大変美味ということがわかりました。さらにグラスにのった根室バフンウニが続きます。こちらも絶品でした。
赤酢に変わりクルマ海老、シマアジ、金目鯛、ノドグロと続きます。特にシマアジが絶品でした。アジとはいうものの歯がない魚であるそうで釣ることが大変難しく漁獲量の少ない高級魚だそうです。
一品へと続き十勝マンガリッツァ豚のモツ煮です。お鮨とモツ鍋という変わった組み合わせですがモツ煮を美味しくいただくことができました。
本日の鮪は青森大間産146kgとやや小ぶりの鮪でした。大トロの後に赤身の漬けと続きました。
一品はマツタケの赤だしです。マツタケは風味食感ともに素晴らしく堪能させていただきました。
煮穴子に続き最後はかんぴょう巻きと本日のお鮨を締めくくりました。いずれも大変美味しく素晴らしい時間を過ごすことができました。
デザートは大分県産初たまごの極プリン·和三盆使用でお店のこだわりを感じることができました。
お酒は強くないのですが、大将のお勧め日本酒「ゆきの美人」を楽しみました。
雰囲気のあるカウンターでとても優雅な時間を過ごすことができました。ご馳走様でした。
