難波の締めは鯖寿司で
週末の9時過ぎ、難波で会合が終わって小腹が空いた。難波はあまり来ることが無いが、以前よりチェックしていたこの店に。
日本酒を頼むとお通しが、蛍烏賊の酢味噌和え、たらのこの煮付け、烏賊の何かオレンジ色の味付け。あまりお客さんがいるわけで無いが少し時間がかかって鯖寿司ハーフ登場、作り置きじゃなくて握ってくれたんですね。
醤油はかけないでそのまま食べてくださいとのこと。関西ではきずしを頼む人が多いけど、この店は、酢ではなくて塩で締めてるんですよ、酢飯の間には鯛のでんぶを入れてますと教えてくれる。接客が丁寧である。きずしも好きだが、この鯖寿司は美味い。わざわざこれだけ食べに来るのもありかもしれない。

締めにここの鯖寿司が食べたくなって、ハーフを電話で注文。15-20分くらいでできるとのこと。20分後に伺って、持ち帰りに。店内はほぼ8割方埋まっていた。
ホテルに帰ってゆっくりと食す。安定の味、山椒の葉と胡麻が効いて良い感じ。
